Introduction

The distillery has managed to bring to life a derelict farm steading at Cnoc Uaine. The distillery aimed to provide an entire experience to the visitor beyond just the distilling, thus the steading also boasts a unique fluid design culminating in an entire visitor experience of an exhibition space, café and tasting room.

Background

The project involved the restoration and extension of a derelict Category B listed quadrangular farm steading at Cnoc Uaine to create a new distillery complex. The development includes a distillery process hall, bottling plant, warehouse accommodation and a visitor centre, with the existing steading sensitively converted to support a two-still arrangement producing up to 500,000 PEA.

Challenges

The scheme required the careful integration of modern distilling and industrial processes within a listed rural structure, balancing heritage conservation with demanding operational and servicing requirements. Coordinating process services alongside visitor facilities also required a clear separation of industrial and public functions.

Solutions

Harley Haddow provided full M&E design services, developing robust and efficient building services solutions to support both production and visitor uses. The site energy strategy combines a local oil-fired steam process boiler for distilling operations with a ground source heat pump serving the visitor centre, delivering an efficient and practical approach suited to the rural setting and operational demands of the distillery.

Project awards

As Project Manager this is no chore for Harley Haddow have delivered an exceptional Distillery on one of the most remote parts of Europe. The Isle of Skye surely has to be one of the most inaccessible Islands surrounding Scotland bereft of either air or rail links. I have therefore no hesitation recommending Harley Haddow to any potential project within the Distilling sector.
